…The roast pork was tender, juicy, and for once made up, by far, the majority of the meat in the sandwich. The slice of ham is not a random redundancy of pig here, adding a welcome layer instead of some added fat, “cured” flavors, and salinity. The pickles were properly bright, without being to sweet, sour or “punchy”. …Yes, warm, thick slices of bread singing with bouquets of vanilla and nutmeg were a great base for the assortment of berries and melon and cantaloupe. The bacon had perfect “chew” and great flavor without being overly salty. The mellow maple rewarded me by topping mouthfuls of however many different elements I could fit on my fork at one time…. …My verdict? The sandwich is a winner. They’re starting with extra points with just the home-baked buttermilk biscuit, but add to that some porky, tasty lean and fatty ham, cut it’s natural saltiness with the rich, earthy sweetness of the fig jam, then complement that sweetness with an oozy cheddar that’s both smooth and sharp…. … I loved the texture of the finely chopped proteins in this terrine, mildly spiced to compliment the pork and moderate any gaminess in the rabbit, and wrapped in bacon for extra flavor.
